Yes, you’ve got it — they are indeed a bunch of motley bakers, united in their passion for baking and roaming. So what else can they name their pizza outlet, but No Mad Baker.

Rohan Bhatt, a partner in the venture said, “My partners, Varun Bhattacharya and Regina Daga, have been roaming around a lot. They have done business at various places, so at best they have been nomads. In addition, all three of us are mad about experimenting with food. So we call ourselves No Mad Baker."

These youngsters met while they were both studying in Pune. 21-year old Regina Daga came back to Ahmedabad and started pursuing her BA in English Literature from Gujarat University and Varun Bhattacharyya followed suit taking up CAT training at a local institute.

Around a year ago, we started serving sandwiches at a private institute where my brother studies after he kept telling us about the lack of quality snacks there,” said Regina. The sandwiches became a talking point and soon the duo began catering to other events including one at IIMA.

When they couldn't afford to order a Dominos pizza, thanks to their shoestring budget, they decided to make one themselves. That's how the idea of baking and cooking took shape for these 20-something founders who come from varied professional backgrounds.

Varun Bhattacharyya, an Economics graduate makes dough and rolls the pizzas; Regina Daga, a literature student, loves to experiment with various ingredients in the market; Rohan Bhatt, a lawyer, is the logistics expert. Friend Ishaan Chanchani, chips in with the deliveries across town. "Our Activa and our first oven have also been with us since the beginning," says Bhatt.

Regina and Varun met in Pune in 2011. Regina hails from Ahmedabad, while Varun is from Hyderabad. Both these foodies claim to get food. They thought: why not start a food business in a city that loves and breathes food? (Ahmedabad loves food, fyi.) The duo, quite young at the time, had no clue how to set up a business and scale it, but that didn’t stop them from starting No Mad Baker.

Starting up from a small family place (home) where they decided to cook their delicious offerings, one day Regina and Varun made chicken and mayo sandwiches and headed to the campus of Pandit Deendayal Petroleum University (PDPU), an institute located in Gandhinagar, approximately 25 kilometres away from the city of Ahmedabad.

The first time I tried to order from here was a couple of months ago. I placed the order at 7:45pm and was assured delivery by 9:30pm. With no sign of the pizza at 9.45pm, I called, my call wasn't picked up, but it was returned after 15 minutes (now 10pm) to tell me that pork ham wasn't available anywhere in the city and would I like to change my order.

The quality and taste of their chicken sausage was the best of all the cold meats. They offered an additional smoked paprika topping on all the pizzas and for spice lovers like us, it was an excellent extra.
